I don't mix my own liquids and the ones I buy are usually pre-steeped, but for the ones that aren't - if I just want to use the "put it in a cupboard and wait a few weeks" method, do I have to take the lid off or keep it on?

I DIY my own custards and don't tend to mess about too much,
once mixed it goes in our kitchen window for 48 hours in daylight (not sunlight) and it goes amber in 24 hours but leave it 2 days, it gets a random shake each time I see it and remember while in the window lol
then leave for the rest of the week and its usually good to go,
